Our first recipe of 2013 is simple, basic, yummy and nutritious. It’s a very fun twist for oatmeal, warm and comforting! Honestly I didn’t feel that it added any extra time to this morning’s breakfast prep (possibly 2 minutes for cutting the apples).
This can be made with your choice of all ingredients, meaning that it’s totally flexible for those who are gluten or dairy free, but also just a great dish if you like to add different things to your oatmeal. If you are gluten free with no oats no matter what, obviously this isn’t for you, but for all others who still keep oats in your GF diet, this will still work.
Of course it’s still totally yummy for those who have no intolerances or allergies!!!
Apple Crisp
(serves 4)
Ingredients
Oats (per package directions for 4 servings)
Water (also per package directions for 4 servings)
1 tsp Cinnamon
1 tsp Vanilla
1/4 C Half and Half (Optional or any other milk substitute)
Honey (to taste or your preferred sweetener)
1 large apple chopped (1/2 inch cubes.. ish!)
*Granola (homemade, store bought, GF… totally optional just adds a fun crunch)
Directions
Bring water to boiling in medium saucepan, add oats and all other ingredients except honey and cook on medium heat until the oatmeal is done. Add the half and half and honey either in the pan or in each individual dish.
Serve with granola sprinkled on top and maybe even a little caramel drizzle if you have some on hand.
*The granola used in this recipe was Archer Farms’ Pecan Sticky Bun granola from Target.
